National Picnic Dayis just around the corner and what better way to celebrate than a delicious berry spread?This recipe is guaranteed to perk up long summer lunches and please the crowds at garden get-togethers.
Ingredients:
- 58g mayonnaise
- 2 tablespoonscider vinegar
- 1 teaspoonsugar
- 3/4 teaspoons salt
- 1/4 teaspoonsground black pepper
- 1 packageof coleslaw
- 1 punnet of Driscoll’s® Victoria™Sweet Blackberries
- 1 punnet of British Blueberries
- 1medium-sized sweet onion, peeled
- 120g buttermilk
Method
- Grate onion to get 40g grated onion. Transfer grated onion with juices to a medium bowl. Add buttermilk, mayonnaise, vinegar, sugar, salt, and pepper until combined.Â
- Add coleslaw mix, Driscoll’s® Victoria™Sweet Blackberries, and British Blueberries and stir gently. Cover and refrigerate until chilled, about 1 hour. The coleslaw can be made up to 1 day ahead, covered, and refrigerated. Serve chilled.
