Inspired by traditional Japanese ramen, we bring you the easiest homemade shrimp ramen with a flavorful broth, fresh veggies, and lots of noodles!
Ingredients:
- 3 packets of ramen
- 2 cups of large shrimp peeled and deveined
- 6 cups chicken, vegetable, or seafood stock
- 2 tablespoons olive oil
- 3 tablespoons soy sauce
- 3 garlic cloves minced
- 1 teaspoon of diced ginger
- 1 1/2 tablespoons of sugar
- 2 cups of chopped green cabbage
- 3/4 cup sliced carrots
- 3/4 cup sweet peppers
- 1/2 cup sliced onion
- I lime juice
- Cilantro to season
Method:
- In a frying pan add 1 tablespoon olive oil. Add shrimp, season with salt and pepper, and cook for 1-2 minutes.
- In another large pot, heat a tablespoon of olive oil and add all the fresh vegetables and cook for 2-3 minutes. Add garlic and ginger.
- Add your desired stock, soy sauce, sugar, lime juice, until combined. Bring to a boil then reduce heat to medium and let simmer for 8 minutes.
- Add the ramen noodles to the broth and cook for another 2-3 minutes. Remove from heat and serve into ramen bowls.
- Add in shrimp and garnish with cilantro.
