Tasty Tuesday: Easy Veganuary Recipe to try at home!

Veganuary, which lasts throughout the whole of January, encourages people to follow a vegan lifestyle for the month, and certainly helps shake up your meals and injects lots of vitamins from cherries, following an indulgent Christmas spent at home!

This easy to prepare Vegan Porridge is complemented with Roasted Cherries and perfect for chilly winter mornings!

Ingredients

  • 150g porridge oats 
  • 100ml oat milk 
  • 450ml water 
  • Handful cherries
  • 2 tbsp maple syrup  
  • Vegan yogurt and toasted flaked almonds

Method

  1. Heat the oven to 180C. Tip the cherries into a roasting tin and cook for 15 mins, until softened. 
  2. Meanwhile, tip the oats, oat milk, and water into a pan. Add a pinch of salt and simmer over a low heat for around 10-15 mins, until all the liquid has been absorbed. 
  3. Toss the roasted cherries in 1 tbsp of the oats. Tip the porridge into bowls, top with the vegan yogurt, remaining maple syrup, toasted almond flakes, and roasted cherries.
