Ingredients:
- 2 eggs
- 1 cup granulated sugar
- 1 1/2 cup flour
- 2 teaspoon cocoa powder
- 1 teaspoon vanilla essence
- 1/4 cup melted butter
- 1/2 cup sour cream
- 1 teaspoon baking powder
- 2/3 cup finely chopped carrots
- Nuts and raisins ( optional)
Method:
- Mix and whisk the dry ingredients and wet ingredients separately in two bowls.
- Fold the dry ingredients into wet ingredients with a spatula until they come together.
- Add the grated carrots, nuts, and raisins into the cake batter.
- Use liners in a cupcake mold and fill them up with 1/3 of the batter.
- Cook in preheated oven for 20 minutes at 360 degrees.
- Garnish with finely chopped carrots on top.
