Tasty Tuesday: Chicken Curry Chips

Bring together great elements of British food culture to make these delicious chicken curry fries!

Ingredients:

For chicken:

  • 1 chicken breast
  • 1 teaspoon curry powder
  • 1 tablespoon oil
  • ¼ teaspoon pepper
  • ¼ teaspoon salt

For the curry:

  • 2 tablespoons oil
  • 150g diced onion
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 200g diced tomato
  • 1 tablespoon curry powder
  • 240ml chicken stock
  • 120g greek yoghurt
  • 300g chips

Method:

First, slice the chicken breast into strips. Then add the curry powder, oil, pepper and salt and rub into the chicken and ensure that it is evenly coated in the dry ingredients. Next, heat the oil in a pan over a medium heat, add the chicken and cook until partially cooked. After this, leave in a clean bowl while you work on the curry mixture.

Now add the onions, ginger and garlic to the pan, cook until done. Next, add the diced tomato and curry powder into the mixture. Next, add the partially cooked chicken back into the pan and cook until done.

Next, stir in your chicken stock with 1 tablespoon of cornstarch, cook until the curry has thickened. Now, turn off the heat and stir in the Greek yoghurt.

Now, preheat your oven to 230°C and cook your chips until done. Once you’ve done this, pour the chicken curry over your chips, and enjoy!
