Tasty @CafeOn Burmese Khowsuey

Are you craving some one-pot dinner dish? So, here’s your solution to it. Burmese Khowsuey is your answer. It’s tasty, delicious, and healthy at the same time. It’s a wholesome dish full of nutrients. It’s a one-pot dish served with a curry, rice noodles, and a variety of condiments. A perfect dinner recipe with your family. This food will bring smiles to your family members as you can enjoy it as an experience.


Ingredients:


For the noodles:


• 2 cups of boiled rice noodles


For the masala paste:


• 1-2 Kashmiri red chili/ any red chilies are preferable with less heat
• 1 ½ teaspoon of coriander seeds
• ½ teaspoon black peppercorns
• 2 teaspoons of cumin seeds
• ½ teaspoon of turmeric powder
• 1 teaspoon of chopped garlic
• 2-3 teaspoons of freshly grated coconut
• 2 teaspoons of chopped ginger
• 2 teaspoons of poppy seeds
• 1 teaspoon of cashew nut chopped


For the curry:


• 2-3 teaspoons of oil (olive oil can also be used)
• 1 bay leaf
• 7-8 curry leaves
• ½ cup of grated onions
• ½ cup of grated tomatoes
• 2 cups of mixed vegetables boiled (cauliflower, french beans, green peas, and carrot)
• 2 cups of coconut milk
• Salt to taste


For Serving:


• ½ cup of garlic cut into rounds
• 1 cup of onions thinly sliced
• ¼ cup of split butter beans soaked for 3-4 hours
• Oil for deep frying
• ½ cup of spring onions chopped
• ¼ finely chopped coriander leaves
• 1 teaspoon of red chili flakes
• Salt to taste
• 2 teaspoons of lemon slice

For the Curry:


• Heat oil in a pan.
• Add bay leaf, curry leaves, and thinly sliced onions.
• Saute it till the onions are slightly brown.
• Take all the masalas and grind them in a mixer jar and make a paste.
• Add the paste and saute it on a medium flame for 1 minute or 2.
• Add the tomatoes and saute on a medium flame for 2 minutes or 3.
• Add the mixed vegetables, coconut milk, and salt.
• Mix all of it well on a medium flame for nearly 5 minutes.
• Stir occasionally. It’s ready, keep it aside.


For the garnish:


• Heat oil in a pan for deep frying.
• Fry the garlic, and onion till brown and take them in an absorbent paper.
• Take the butter beans and deep fry them on low flame till brown. Take it in an absorbent paper till the excess oil is drained out.


For Serving:


• Take a serving bowl. Add the boiled rice noodles.
• Add the curry and spread evenly over the noodles.
• Garnish it with fried onions, garlic, and butter beans.
• Add spring onions over the top of it.
• Sprinkle with some coriander leaves, chili flakes, a little salt, and lemon juice.


Burmese Khowsuey is ready. Enjoy.
