There are just too many excellent restaurants in the UK to select from, making it challenging to compile a list like this.

There are excellent restaurants strewn around England, Scotland, Wales, and Northern Ireland that are working constantly to prepare meals that will not only fill you up but also leave you with napkin-stained memories you can have with you for the rest of your life. BiBi (London)

One of the most fascinating restaurants in London right now is Chet Sharma’s BiBi. The restaurant describes itself as “modern Indian,” but I’d argue that it’s underselling the creativity and originality of dishes like Wookey Hole cheese papad and Kentish pea Dahi puri. There is some very creative cooking going on here, yet the dishes that come out of the kitchen are wonderful, so the most important thing of all is not compromised by thinking and fiddling. Ynyshir (Eglwys Fach, Ceredigion)

A unique experience is Ynyshir. They don’t accommodate any dietary needs, and it is pricey and scary. Not your style? Stop going. That is chef-patron Gareth Ward’s bold strategy, which is both honest and rude. Not everyone will enjoy Ynyshir, but those who do, enjoy it.

Moreover, the multi-course tasting menu has a Japanese influence and includes some amazing ingredients prepared with great care and zeal. You have the opportunity to become lost in a cavalcade of unrelentingly delicious food at this riot of a restaurant. You might find it to be the most enjoyable fine-dining experience you’ve ever had.

Hare & Hounds (Aberthin, South Glamorgan)

At proper pubs where the food is prepared with care, you may find some of the best meals in the UK. More than anybody else, the chefs at the Hare & Hounds in Aberthin are concerned. This establishment is the furthest thing from a poncy gastropub you could imagine, but it is still very much a pub-pub that is popular with locals and those who walk their dogs.

They just so happen to also have a Michelin Bib Gourmand. From freshly baked sourdough bread and cultured butter to silky smooth pasta, every dish is freshly prepared in the kitchen. It is evident. Because it’s great.

Inver is a brilliant little diamond in the crown of the Scottish dining scene, looking out over the shore of Loch Fyne. It can be risky to modernize a meal that is so deeply ingrained in history and nostalgia because doing so sometimes results in the loss of the dish’s heart and soul. But the cooks at Chishuru make it seem simple.

The Brixton restaurant owned by Joké Bakare, which specializes in modern West African cuisine prepared to utilize traditional recipes and methods, is a must-visit. The £48 set menu is jam-packed with dishes like yaji-coated bavette and gbegiri soup in rib-sticking quantities. The menu is a whirlwind that will leave you speechless and make you go for your phone to make another reservation right away.
