Tasty Tuesday: Victoria Sweet Blackberry Coleslaw Recipe!

National Picnic Day is just around the corner and what better way to celebrate than a delicious berry spread? This recipe is guaranteed to perk up long summer lunches and please the crowds at garden get-togethers. 

Ingredients:

  • 58g mayonnaise
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar
  • 3/4 teaspoons salt
  • 1/4 teaspoons ground black pepper
  • 1 package of coleslaw 
  • 1 punnet of  Driscoll’s® Victoriaâ„¢Sweet Blackberries
  • 1 punnet of British Blueberries
  • 1 medium-sized sweet onion, peeled
  • 120g buttermilk

Method

  1. Grate onion to get 40g grated onion. Transfer grated onion with juices to a medium bowl. Add buttermilk, mayonnaise, vinegar, sugar, salt, and pepper until combined. 
  2. Add coleslaw mix, Driscoll’s® Victoria™Sweet Blackberries, and British Blueberries and stir gently. Cover and refrigerate until chilled, about 1 hour. The coleslaw can be made up to 1 day ahead, covered, and refrigerated. Serve chilled.
