Tasty Tuesday: Easy Red Velvet Cupcake recipe!

Ingredients:

For cupcakes:

1 and 3/4 cup flour, 1 cup sugar, 1 tbsp baking powder, 2 large eggs, 1 tbsp vanilla essence, ¾ cup melted butter, 1 cup buttermilk,  2 tbsp cocoa, red food coloring.

For Cream cheese frosting:

2 cups of unsalted butter, 1 tin condense milk, 1 cup cream cheese, 1/2 tsp. vanilla paste.

Method:

Sift the dry ingredients together.  Then take a separate bowl and whisk the eggs. Add the vanilla essence, buttermilk, and melted butter into the bowl. Finally, pour the wet ingredients from the bowl into the sifted dry ingredients. Add the red food color. Whisk with a hand till it forms a smooth cake batter. Bake in a preheated oven at 320˚F for 25 minutes.

While the cupcakes are baking, prepare your cream cheese frosting. For this, you need to chill the bowl in the refrigerator. Add room temperature butter in the bowl and beat it using an electric beater till it becomes smooth and soft. Add chilled condensed milk to the butter and beat till they are nicely incorporated. Finally, add 1 cup of cream cheese to the buttercream.

Put the cream cheese into a piping bag and pipe them on cooled cupcakes. Voilà you have made some moist red velvet cupcakes with the easiest well balance cream cheese frosting you could imagine!
