Tasty @CafeOn Zucchini Noodles Recipe

Are you craving a healthy yet unhealthy-looking dish? Zucchini Noodles are your answer. Zucchini noodles is the answer to your 4’o clock hunger of binging on something unhealthy. Zucchini is rich in vitamin B6 and it helps in regulating blood glucose. It is the easiest and most healthy option when you crave noodles. It plays a very important role in the protection against diabetes. It helps in weight loss and lowers cholesterol levels with an enhancement of the digestion procedure. The dish might appear unhealthy but it’s worth your effort. Let’s check out the recipe for that healthy intake.


Ingredients:


• 4 medium-sized zucchinis
• 2-3 teaspoons of minced garlic
• 1 teaspoon of red chili flakes
• 2 medium-sized tomatoes chopped
• ½ cup of button mushrooms chopped
• ½ cup of shredded parmesan cheese, some extra grated cheese while serving
• Handful of basil leaves torn into pieces
• 1 teaspoon of cornstarch
• 2 teaspoons of cold water
• ½ teaspoon of black pepper powder
• Salt
• 3-4 tablespoons of extra virgin olive oil


Instructions:


For the zucchini:

Zucchini Strips


• Take the zucchini and wash it thoroughly.
• Keep the skin intact and cut the zucchini into thin slices vertically.
• Take each of the thin slices and roll it gently and then cut out the shreds from it like the noodles.
• The shape of the noodles is achieved with the zucchini.


For the noodles:


• Take a deep skillet
• Add the extra virgin olive oil to it.
• Let it heat for some moments. Adjust the flame to medium heat.
• Let the oil bubble up.
• As soon as the oil bubbles up add the red chili flakes and the minced garlic to the pan.
• Stir it a little till the oil infuses the garlic flavor and the raw smell of the garlic vanishes.
• Add the zucchini noodles and the mushrooms.
• Toss it for 5-7 minutes so that they get wilted without losing its crunch.
• Keep tossing the zucchini or else it might sit at the bottom of the skillet being mushy.
• Add the tomatoes, the basil leaves, and the parmesan cheese and cook for a minute.


For the sauce:


• Take out the noodles and take them in a serving dish.
• The liquid that’s left in the pan, let the flame of the gas be simmered.
• Prepare a cornstarch slurry by adding water to it.
• Add the slurry in the sauce remaining in the skillet to make it thicken.
• Pour it over the zucchini noodles.
• Add some grated parmesan cheese for that texture.
