Salted Caramel Tarts

Ingredients

For Tart shells-

  • All-purpose flour, 2 cups
  • Butter, 1 cup (melted)
  • Icing sugar, 8 tbsp
  • Vanilla extract, 1 ½ tbsp

For Chocolate Caramel filling-

  • Sugar, 1 1/2 cup
  • Cream, 1 cup
  • Water, 4 tbsp
  • salt
  • Butter, 2 tsp
  • Chocolate chips, 1/2 cup

Method

  • Mix the ingredients for making the tart shells together to make a soft dough.
  • Press the dough against tart tins to give the shape.
  • Bake it for 30 minutes at 190°C. Cool them down over a rack.
  • Next, pour sugar, and water into a pan over medium heat.
  • Let the sugar turn into a brown rich golden caramel.
  • Make sure to keep an eye on the caramel as they tend to burn very easily.
  • Once you get your color, remove the pan from the stove and add room temperature heavy cream.
  • Stir till it’s nicely incorporated and finally add your salt and butter to get that silky texture.
  • In another bowl take the chocolate chips and 1/4 cup heavy cream and microwave it for 10 to 15 seconds. Stir and make a thick ganache.
  • Finally, fill the tart shells with chocolate ganache and drizzle the caramel filling on top.
  • Serve and enjoy with a fresh glass of juice!
