Ingredients:


For the potatoes:


• 100 grams of baby potatoes
• Salt to taste
• 1 ½ teaspoon of black pepper
• 1 spring of rosemary
• 1-2 cloves of whole garlic
• 1 teaspoon of dried thyme
• Oil (can be air fried or baked)


For the dipping sauce:


• ½ cup of mayonnaise
• ½ cup of cream
• 1-2 teaspoons of roasted garlic
• Handful of chives or spring onion chopped


Method:

For the potato:


• Take the baby potatoes and wash them thoroughly.
• Cut the potatoes into halves.
• Leave the skin intact for the crispness when the potatoes will be prepared.
• Heat oil in a pan.
• Add the garlic cloves and the rosemary for flavor.
• Add the baby potatoes and then add salt and pepper to taste.
• Fry it on medium-high heat
• Let it fry for 5-6 minutes on each side.
• You can fry it for 2-3 minutes more to get that crisp texture outside.
• You can bake them in the microwave following the same procedure.


For the dipping sauce:


• Take a bowl and add the mayonnaise, cream, and roasted garlic.
• Mix it well.
• Add the chives or spring onions.
• Give it another mix.
• Add some on the top.
• Dipping sauce is ready.
To serve:
• Take a serving plate and add the fried or baked potatoes. Serve along with the dipping sauce.
