Tasty @CafeOn Mushroom and Corn Soup Recipe

Healthy things can be tasty. Without further ado let’s get to the recipe.


Ingredients:


• 1 ½ cups of mushroom (washed and cut into slices)
• 1 cup of sweet corn (boiled)
• ½ cup of onion finely chopped
• 7-8 garlic cloves finely chopped
• ½ inch of ginger grated finely
• 1 bunch of spring onion greens finely chopped
• 2 cups Vegetable stock (freshly prepared preferably) or vegetable stock cube or water
• 1-2 teaspoons of black pepper
• Salt to taste
• 2 teaspoons of fresh cream (diluted with 1-2 teaspoons of milk)
• Handful of dried mixed herbs or oregano
• 2 teaspoons of olive oil or 1 teaspoon of butter and 1 teaspoon of olive oil


Method:

For the veggies:


• Take a pan and heat it on medium-low flame. Add the olive oil and let it heat for a minute. You can use both olive oil and butter for the recipe.
• Add the garlic stir for a while then add the onions and ginger.
• Stir all of it for a while before the raw aroma goes.
• Then add the mushrooms and saute them on high flame for four to five minutes.
• Add the sweet corn and stir it for a minute or two.


For the soup:


• Add the seasonings, salt, pepper, and dried mixed herbs.
• Mix it once and then add water or vegetable stock or the vegetable stock cube along with some water.
• Slow down the flame of the gas to medium-low.
• Bring the soup to a boil.
• Take some mushrooms and corn from the soupy broth and blend it in a blender jar. It will add to the thickness of the soup. (You can also use cornstarch slurry to thicken the soup)
• Add the blended paste to the boiling soup.
• Add the diluted cream and give it a good mix.
• Add the spring onions and adjust the seasoning.
• Soup is ready to be served.


For the garnish:


• Take a bowl and pour the soup. Add the spring onion greens and the mixed herbs seasoning and black pepper for the garnish
• Serve it hot.
